Hands-On Peruvian Grilling

Join our Peruvian chef, Lucio Davila, for an exciting evening on the patio as we fire up the grill and explore the bright, bold flavors of Peru. In this, outdoor hands-on class, you’ll dive into the vibrant ingredients that make Peruvian cuisine so unforgettable—think citrus, chiles, fresh herbs and smoky grilled specialties. You’ll learn essential techniques for grilling meats, vegetables and sauces while discovering how Peru’s diverse culinary influences create dishes that are both comforting and full of personality. Along the way, Chef Lucio will share tips, stories, and flavor-building secrets to help you confidently bring these exciting tastes into your own everyday cooking.

Grilling classes take place outdoors on our patio. In case of inclement weather, class will be moved indoors and taught as a hands-on cooking class with an emphasis on using indoor grill pans.

Menu you’ll cook and enjoy:

• Pollo a la Braza (Grilled Chicken with Paprika, Herbs and Lime) 
• Anticucho de Lomo (Garlic and Cumin Beef Tenderloin Skewers)
• Papas Rostizadas (Grill Roasted Potatoes)
• Salsa Cacera (Herb and Aji Amarillo) y Salsa Callejera (Green Onion Chimichurri)
• Ensalada Solterito (Quinoa, Queso Fesco and Grilled Corn Salad)

• How to set up your grill
• Cooking over gas and charcoal grills
• Getting familiar with Peruvian cuisine and ingredients 
• Working with fresh herbs and spices
• Making marinades
• Selecting and grilling chicken and beef
• Determining chicken and beef doneness
• Balancing flavors
• Selecting and grilling potatoes
• Preparing salsa
• Grilling vegetables 

In this hands-on class, students will be paired in groups of three to five and work together as a team to prepare the recipes.
