Hands-On Fire and Fungi: Grilled Mushroom Feast

Join us for an outdoor, hands-on class celebrating fantastic fungi! Discover why mushrooms are a favorite ingredient for the grill, with their hearty texture, rich umami flavor and remarkable versatility. You'll learn techniques for grilling a variety of mushrooms to perfection while creating delicious vegetarian dishes that are satisfying enough to take center stage at any cookout. Whether you're a lifelong vegetarian or simply looking to bring more vegetables to the grill, you'll leave with techniques and recipes that showcase mushrooms at their smoky, savory best.

Grilling classes take place outdoors on our patio and are therefore subject to weather cancellation. In the event of a cancellation, all participants will be emailed no later than 8pm the day before the class (for morning classes) and 2pm (for evening classes) on the day of the class.

Menu you’ll cook and enjoy:

• Grilled King Trumpet Mushrooms with Salsa Verde  
• Smoked Maitake Mushroom Pizza with Goat Cheese, Roasted Garlic and Arugula 
• Grilled Oyster Mushroom and Artichoke Antipasto Salad with Grilled Shallot-Lemon Vinaigrette
• Grilled Portobello and Zucchini Parmesan with Mozzarella, Marinara and Basil

• Cooking over gas and charcoal grills
• Selecting and storing mushrooms
• Grilling and smoking mushrooms
• Using smoking chips
• Making fresh herb sauces
• Shaping and grilling pizza dough
• Using a pizza stone
• Preparing vinaigrette
• Balancing flavors

In this hands-on class, students will be paired in groups of three to five and work together as a team to prepare the recipes.
